I need to blog more. Have been so busy as of late. Weekends in the summer fill up fast. Weekdays fly by as I am at work 10-11 hours and then me tired. I was in Dallas a few weeks ago, then went camping this past weekend, have a fam reunion this weekend, then have guests coming to town the weekend after. I need a weekend of nothing. Or a weekend of good ol' fashioned bar hopping and sleeping. Hoping it can be done soon...soonish...

And so it begins...
So I am trying to keep track of what I eat. It will force me to eat better. I want to stay around 1200 calories a day. Day 2 today. Fitday.com is a cool website (free) to track food and calories, and activity. I have eaten 923 calories already today! Too bad I am hungry...Not sure what I will make for dinner but it can't be more than 300 calories...:-/

Windows Vista is to computers as _____ is to _____
*Sigh* I am so annoyed with Windows Vista. I really wish I could have gotten XP. I missed the boat when Dell was offering XP for the last time, not too long before I decided to buy a new laptop.
Issues with Vista and my Dell Inspiron 1525 laptop:
Every time I try and play Sims 2, the game freezes while loading the selected family. Then I have to do Ctrl-Alt-Delete and end task. Sometimes I will do this 4-5 times before a family will finally load and I can play. Also, I can't create new Sims from scratch; it always (100% of the time) locks up after I am done creating the Sim and the game is loading.
Eventually, after 4-5 times performing Ctrl-Alt-Delete (sometimes more), the game finally loads and I can play. But unfortunately it inevitably locks up not too long after I have been playing, and I have to end task once again. Once I installed Sims 2 on my roommate's Inspiron 1525 laptop with XP, and the game performed and played like a dream. Unfortunately he wouldn't let me keep it on there any play on his computer.
What else...oh, pretty much 4 out of 5 times when I shut down my laptop (Start > Shut Down), the damn thing restarts on its own, as soon as it is done shutting down. SUPER annoying. Then I have to wait for it to load up, and perform the shut down again.
I hate Vista!! I am thinking of wiping Vista off and installing XP...but I heard you void your warranty if you do that. Also, I would need some help doing it, as I don't think I have all of the skillz and know-how to do it properly. I can do most things, such as reinstalling widows, but not sure if I would want to tackle downgrading to XP on my own.....

Blah
I'm a pile of lazy today. Went out and met up with K-Thoele downtown last night. Meg went to the Britney concert so we hung out at Gluek's. I was feeling fine but at some left soberville and entered drunkville. Vandi came out too and we had a good time at Lyons Pub. I had to crash at her place downtown. So yeah, I am in bed watching TV and blogging. Haven't done jack shitt today...oh well. I talked to my sister and she is in worse shape than me today after her night out. It is supposed to snow tonight. What should I make for dinner? I have no idea why I am watching the Final Four. I need to clean my room. I need to decide if I am going to go to NYC in a few weeks or not. I need to get a job.

Green Curry with Mahi Mahi
Last night I made Green Curry with Mahi Mahi. It was very tasty. You should try it sometime. The difficult part is balancing the flavors in the curry. In the end it turned out great.
1 (14 oz.) can coconut milk
1-4 Tbs. Green Curry Paste (I used Thai Kitchen brand)
1/3 cup vegetable or chicken stock + more to taste
2 Tbs. Fish Sauce
2 Tbs. brown sugar + more to taste
1⁄4 cup chopped basil leaves
lime juice, to taste
Assorted vegetables (I used peas, bamboo shoots, and zucchini)
2 Mahi Mahi fillets
Steamed jasmine rice
Start by getting the rice going. I made 1.5 cups of jasmine rice in the rice steamer. I added 2 cups of water and let it run for 50 minutes. Turned out perfect.
Mix the coconut milk, green curry paste, stock, fish sauce, brown sugar and basil and bring it to a boil. Reduce heat to low and simmer for 15 minutes. Add the vegetables and simmer. Adjust flavors.
Add some olive oil to a frying pan (not non-stick). Add the Mahi Mahi fillets and keep the heat on about medium. Let them cook and don't flip the fish until it's crispy, otherwise the fish will fall apart.
Serve the green curry over the rice and fish. Yummy!
